Atleast at my current org the SEs I have seen climb or go other places with good offers as SEs or similar aren’t the most technical. It’s the ones who can just talk about it the best in simple terms.
The SEs who want to build stuff seem to wind up getting out of the role and into product or similar.
P.S. I also felt this exact way at my first SE role and decided to find an org with an SE team where there was a big emphasis teaching the technical skills we needed for our product.

Yea I'm much more comfortable talking about workflow solutions but I am really interested to learn more technical skills too. I'd love if my company invested in some education for me but our product isn't technical really so it wouldn't make a lot of sense for them. Sounds like you found a great path!

I love the SE role and working with reps to be the SME but when I look around for job opportunities I feel like I'm almost always underqualified from a technical standpoint. I'm not tech illiterate by any means but I'm no software engineer and feel much less like an "engineer" and more like a consultant.
What are the odds of continuing this path in a less technical capacity?
That’s perfectly normal. Some SEs are very technical and come from an engineering background while other SEs are more like management consultants. You don’t need to know how to code to succeed as an SE.
Take pride in your skill sets and leverage them as your qualifications. Technical or not.

I’m not technical, I focus more on workflows and end user experiences. I’ve seen others in my role grow to be account/sales executives. They understand the product well, can articulate its value clearly and guide overall strategy.
If the conversation needs to be very technical, then there are folks who’ll come in to support those discussions.
I am currently exploring health tech companies and looking to transition from tech consulting into sales engineering. Would you mind sharing what company you work for? I am not super technical and have more experience clinical workflows. I’d love to explore sales engineer positions at your company. Thanks!
Writing code is not a requirement for one to “be technical”
Fake it til you make it... I'm not really technical and am the only SE in my team that was not previously a SWE. I also hit my #s so I guess I'm alright at selling lol
