If it’s going to someone even with me or lower - hey.
If it’s going to someone on my team or I’m close with - yo.
Lol yea that is me. Better than just “name”.
I got told to not say hey in emails but hi and hello are ok

Probably overthinking it. If someone told me that “hey” was too informal I’d tell them to kick rocks - there are plenty of people writing in broken English that they can go focus on.

I would only use hey with a team member that I was familiar with, not with someone knew or a client
I follow clients lead. If they say hi, I say hi. If they start with name only, I mirror.
I don’t say hey in emails, even with work friends - hey is probably ok on chat but perhaps too cavalier for mail IMHO.
Now that we’ve discussed email openings, what about closings? My favorites are Warmest Regards; Much Love; and Cheers
I use “Hi” with everyone. I find using just the name to be way too straightforward and not friendly.
“Hey” is for horses. I despise it in emails. Hi is fine, hello is fine, just my name is fine.
I use hi/hey/dear to the people I’m not close with. Those I’m close with and interact on nearly daily basis...I get to the point either with their name or sometimes without...
I'm seeing people use "morning" or "afternoon" as a greeting rather than "good morning" or "good afternoon," and it drives me nuts.

"Hey" is reserved for fairly close relationships (have worked together a while or been friends a while).

I use “hi ____,” though if it’s a quick casual email to someone I know well, I might just not use an opening at all. Or say “hi there—“.
“Hey” is fine for speaking to someone you know well or perhaps an IM, but not for email. It grates on some people so best to avoid.
People who say hope all is well or I hope you’re well in every email are annoying. Barf. I spoke to you yesterday or even sooner than that. You know I’m “well” other than reading your annoying email
