All I know about Spokane is that my friend's gay moms live there and have lived there for years, so it must be welcoming enough
Spokane is pretty far from any other cities. Coeur d'Alene is just across the WA/ Idaho border, but that's not a big city. Three hours east gets you to Missoula, Montana. It's about 4.5 hours drive to Seattle (longer or impossible in winter due to mountain passes).
Spokane is ok, you'd find a community and I know of other LGBT folks who live there. But it is definitely not a liberal city and it's a long drive to get out of the red zone. There is great stuff to do and natural beauty though.

Downtown Knoxville seems a little hip and alternative, and the U of T influence may help - living downtown or just west of it in the Bearden area might not be bad. That said, the U of T influence mainly creates a huge college sports culture and on weekends people are glued to UT football and men’s/ladies basketball. It’s very much the Bible Belt and I’d say you should consider if you’ll feel comfortable in that atmosphere (and businesses like Chick Fil A and Hobby Lobby all over, with the associated politics). PM me if I can help more (I travel there quite a bit).
The only data point I have is a poly / bi couple (m/f) who moved from the Bay Area to Spokane. They have been very happy and the city seems to have a range of lgbt friendly organizations and social outlets. 🏳️⚧️👩🏻
