Is there a disparity between the SWE TC AND NETWORK ENGINEER TC? I see that SWEs with 2YOE in Google get TC ~45L INR. I agree. If you think she now has it under control this seems like a win-win for all involved. Worst case, move on.
I know someone who hired such a disbarred attorney and it really worked well for them. It wasn’t for client issues but missing bar payments apparently. One issue will be whether this person can be looked up and if that disciplinary status can be embarrassing. Said assistant changed their name.

Make sure you aren’t getting into a situation where she is practicing law without a license. Her natural tendency is likely going to be to be an attorney. Review your state’s rules of professional conduct on this topic. I also believe in second chances, but you still have to comply with the rules.
No client contact just mostly legal research and writing.
Is she getting readmitted to the bar? If so, will she leave you to work as an actual attorney once she does? Even with at will employment, its tough to fire people, so consider what happens if you train her, she's great as an assistant but not great as an attorney, and then she wants to work as an attorney.
