Here’s what I do in your shoes and have for the last 15 years: take all the projects on your plate that are “ASAP”. Take 8-12 hours (but no more) and divide that by the # of projects. Example, if there 4 ASAP projects, the # is 2-3 hours. Break your day (or the rest of the day) up into equal chunks, with a 30m-one hour break between each chunk to answer email, do other low brain tasks and take a break. spend that time you calculated (2-3 hours) on each project- and NO MORE- 30 minutes before the time slot is over, draft an email to partner or senior saying you only had 2-3 hours to spend on this today given your other obligation and you were able to do ABC but XYZ could use more attention and offer to pick it back up in 48 hours if they need more help. Don’t promise 24 unless you know you can finish all other projects on your plate in 24. I hope that helps OP.
*** I still work that way even with my own clients. I will tell them that if they want an S-1 that’s a piece of crap I can give it to them in a day or two. If they want something better, they can wait or find another lawyer bc I’m not caring about unreasonable clients
