I have a nutritionist who recommended overnight oats with some fruit. I prep some bacon in the oven and boil eggs very early in the morning or the night before so I’m not rushing out the door. Fruit or avocado toast is helpful as well. Some kind bars too or a yogurt parfait.
I used to do this twice a week-but great idea doing 4 at once. Overnight oats with fruit and yogurt. Soo good. I also meal prepped all of my lunches on Sundays. Made one batch of a meat, heated up some rice, and added a veggie. Good luck—it’s hard but doable! ❤️❤️
Coffee for breakfast, coffee for lunch, coffee for snack and finally a real dinner. Call it "intermittent fasting' instead of too busy to eat.

Daily Harvest smoothies!

Protein bars and shakes are a life saver!
Lenny and Larry’s complete cookies are my emergency breakfast. For lunch I usually pack the previous night’s leftovers.
Same with me, I have a 2 yo and a 6 month old. I like eggo waffles or anything I can through in a toaster while I’m getting the kids ready. Do you have an air fryer? Getting one has helped me a lot. You can throw in most things like veggies, snacks, pizza bagels, etc. Keep some fruit on hand too that doesn’t require cutting up if you’re short on time (apples, bananas, plums, apricot, etc).
I have the combo (Insta pot with airfryer top) and it’s AMAZING. Takes up way less space than 2 appliances and super versatile.
I buy pre packaged salads and sandwiches to throw in my lunch bag. I alternate between Kroger, Tom Thumb, and Walmart to get variety. Just check the expiry date to make sure it will last the week. Not super healthy, but neither is skipping meals 🤷🏻♀️
I would bring peanut butter to work and something to eat it with, e.g. bread, rice cakes, apples. It’s so filling and you don’t need to do anything to it. Good thing to have to snack on. I also like the Trader Joe’s egg bites and would pop them in the microwave at work for breakfast
I make a bunch of hard boiled eggs in advance and grab two and some sliced sourdough bread on the way out the door for breakfast.
I keep a couple of easy microwaveable items in my office for lunch purposes in case I forget to prep it the night before (not sure if you have a fridge and microwave at work, but I assume you have some way to store and heat food).
Honestly, I have never been a meal prep person, and I still don’t, but I do tend to make extra dinner portions and make a Tupperware meal during clean up because it’s easy. Ie if we eat salmon for dinner, I make an extra piece and toss that with some rice/veggies for the next day. I keep microwaveable pouches of rice and pasta at work so I can mix them with whatever protein I have leftover if we didn’t have extra sides. And in a pinch, I toss some olive oil and cheese into a pouch and make do.
Overnight oats!
Overnight oatmeal or chia pudding - you can prep them a few days in advance so you don’t have to spend time in the morning putting breakfast together. You can also change it up so you don’t get bored. There are also frozen Veggies Made Great egg frittatas that you can buy, which taste great and are quick to warm up in the morning. Throw it in a wrap or eat it alone and your baby might like it too!
Oatmeal packets. I pour it in a coffee mug at work and eat it as I catch up on the day. Can eat it with a fruit like bananas! :)

Yeah, I get ready made meals and keep them at work. Breakfast burritos and shakes.. :)
Prep the food the night before, PBJ / Nutella folded sandwiches (easy and fast to prep &!gobble down), probiotic drink yogurts, nature valley oat bars or Quaker chews, yes I concur breakfast smoothies definitely!

Greek yogurt with a handful of granola, Costco has some yummy egg cup/bite things that microwave, just crack an egg or jimmy dean egg cups/scrambles you can do in the microwave.
I became the queen of cold grabs. The individualized salads or yogurt and granola grabs buy them in packs and then it's literally a roll out of bed and eat (or lunch). If you're looking to reduce costing and don't want premix you can take time and night but... who has time for that?
Ready made grocery store fresh baked muffins, bananas, all in one fruit bowls, Dole fruit cups and Dole açaí bowls, SIMPLY smoothie bottle drinks (they’re ready made)
Bento box of snacks. Easy grabs like yogurt, protein bars. Sometimes I keep protein bars, crackers etc. in my car as a “snack box” for me and the kids.
I keep a stash of protein bars in my office drawer for this very reason.
