When did you get consulting offer? If last week, then the usual 2 weeks notice would end around the 15th. You could say that you're on a very critical client engagement and need to stay an extra week so a suitable replacement and knowledge transfer and some hand holding for the replacement can be done.
That will bring you to the week of Oct 19th and by the end of that week you should know if industry is panning out or no. Either way, next week you could put in your notice to current employer so that way you can safely join whichever of the two works out.

Offers usually expire in a week — you can try asking for an extension but don’t get your hopes up
Additional details: current offer is only a 12% bump but comes with a title increase and no meaningful change in scope of work/responsibilities as I wouldn’t have a sales target.
Target industry role is a reputable healthcare company, SM role, maybe slightly lower on base than consulting, but has really good bonus and stock options. Role is internal consulting/execution focused but I’m viewing it as a step into this company to network and land the marketing gig I want through networking (would need 2+ years to switch)
What’s your WLB priority?
I have pretty good WLB now and neither industry/consulting firm are way off on this factor.

It’s ok to push. Recruiter will ask you why and it may work in your favor to say there’s another offer coming up. Current offer might bump it up
Two weeks is reasonable...they won’t pull the offer if you ask but may say no

Accept the offer and push the start date. Changing your mind is fine and if messaged right won’t burn a bridge...it happens all the time.
How would I message reneging on my word? I don’t see an appropriate way to message that.

Why leave your current employer for the same role and title for a 12% bump? Unless youre getting counseled out, consider not leaving altogether. Then, you won't have to worry about reneging.
