Explain this exact thing to the interview panel. They should be sensitive to the fact that you can't legally share specific designs from others companies.
I've been through this exact scenario as an interviewer for candidates. You've been selected based on your portfolio and CV, so anything after that is a bonus in my eyes.
As you have said, if you have some good passion/shareable projects on your portfolio site, then that should be more than sufficient.
If they really need to test your skillset further, they'll send out a technical test that is based on one of their projects.

You can kindly suggest to do a design challenge instead...since relevant work you did is already under NDA
Can you offer to share the designs in an interview? Most companies are understanding that work is confidential and you cannot always supply a direct link.
Or are you able to white label it a share a password protected version?
I would be open and honest about your work and what you have done so far. When I interview folks, I care almost as much about their personality and their honesty I get from the discussion as much as I do about their actual body of work. No one wants a super experienced person on their team if they won't listen or communicate.
The design projects that I have on my website are not UI and I only have UX Research type projects that end at the wireframing phase...
Technical enough to understand web technologies. Companies shouldn't be too harsh on designers not having those skills initially as they can learn on the job. However, you'll sit out from the crowd if you have some foundational skills or an understanding of:

CSS
JS
Web accessibility standards
Version Control systems
