Honestly, I’d talk to a dermatologist. They might be able to figure out precisely what the issue is (diet, behavior, genetics, water type, etc.) to help you narrow down your treatment options. Personally, I (white, young, female, straight hair, dye/perm virgin) tend to get visibly oily hair within two days of a shower. I use a clarifying shampoo (I use the Lush Jumping Juniper shampoo bar), followed by a moisturizing shampoo and matching conditioner. The moisturizing shampoo makes my hair soft and healthy, but the product buildup is insane, which is why I use the shampoo bar first.

OP, yes because my greasy hair was being caused by a skin condition (that I didnt even know I had), he looked at my scalp under a magnifier and than prescribed the shampoo (in case it wasn't clear he gave me a prescription shampoo NOT dish soap 😅)
Counter-intuitive: start going longer without using shampoo. First a day. Then 2 days. Then 3. Try to get it slowly down to once per week. At first your hair will feel nasty. It's a slow process that took about 3 months for me. But your scalp's natural oils will eventually stop overproducing and you can go a month or more on just conditioner and even go a day or two just washing the body, not the hair. I say this as someone with mixed Euro heritage that includes Italians.

But for real I just wash it every day and sometimes twice a day if I have an event.
You’re not alone. I have the same issue and dry shampoo helps for about a couple of hours before it devolves into a greasy mess again. I used to keep dry shampoo in the office so I could re apply throughout the day
Gotta use Nioxin shampoo cleanser and conditioner. It focuses on balancing the PH of your scalp. It also clears out all the oil, debris and build up.
I tried everything and asked several dermatologists. Everyone in my family has the same issue. Silicone/sulfate-free shampoos help but only for a few hours, meaning I still would not be able to go 2 days without washing my hair, but maybe 1,5 at most. My conclusion is nothing to do but to use a non-harmful shampoo free from aggressive chemicals, and stop feeling guilty for washing your hair as much as you need or using dry shampoo if you don’t have time to wash and restyle
Stop touching your hair. Comb it or whatever in the morning and then leave it all day. I shower once a week (use dry shampoo at times), and I get measurably better looking hair for days when I'm not touching it/combing it with my hands. Also use only dry shampoo no other styling product. Mousse/hairspray is usually ok and I can go 3-4 days that way, but any oil or moisturizer makes it so I have to shower daily.

You probably already do this but only use conditioner on the ends of your hair. I use a tresemme deep clean shampoo. I also found some dry shampoo sheets from Sephora that basically work like the face oil blotting sheets but for hair, sometimes better than adding more product
I use dry shampoo like every day. I use the super strength stuff made out of charcoal that Sephora sells. It’s a life saver
Ive had the same problem, but it’s gotten better. I have blonde, very fine (though not thin) hair. I’ve used New Wash and it works decently. Also kind of weird but sometimes I’ll work out and let my hair get sweaty and then just blow dry it and not wash it. The salt seems to soak up some of the grease (gross, I know).
Don’t put any hair products after you wash your hair! I second applying minimal conditioner (avoid the scalp). If you have long hair, I found that wearing my hair up helps.
Try a scalp scrub shampoo! They are available from high end brands and drugstore. I found 1x a week helps a ton, my hair is SO clean and voluminous after

I use Aveda shampoos and find they work well. I’ve spent the pandemic trying to train my hair into every other day showers, and I’m almost there as long as I use dry shampoo. It’s one of those things that takes time.
