It's certainly an interesting dilemma to be in. If I was strutting around in your boots, I'd take the chance just to interview. I also completely understand being worn down from interviewing for a while and finally wanting to slow down.
If you're really uncertain, literally flip a coin. You might have a eureka moment while it's in the air about what you want to do, or you truly leave it up to chance.
Best of luck in whatever you decide.
I say go for it. Interviewing doesn’t mean you’ll accept should you get the offer. Feedback on GCP work culture is all over the place and it will depend on the specific team you land on so extrapolating isn’t going to help here. In the end, you regret the things you don’t do more than the things you do.

You've heard bad things about that team at Google? If so, then the main question is just "Is a better/really high comp worth the risk of potentially having a bad team/manager/WLB?"
Sure it's Google but if the team ends up being horrible as you're expecting it to be (bad team members or manager, long hours, heavy workload, etc), is that really worth the better pay? Maybe consider finding another team if you really want to join Google for a better comp.
Well, I'd ensure you have the mental bandwidth to perform in the interviews - you will have a candidate file, and while this may not be the role you'll accept, your interview performance will be here. So only interview if you think you can knock it out.
Personally, the rate at which Cloud is hiring, a few months later should be no problem. You'll still have plenty of open roles to choose from. So stay in touch with the recruiter and get back when you are ready.
What non technical role are you in where you’re getting recruited by Google GCP? Are you a product operations manager currently? Just curious, would love to work on the Google cloud!
Go for the interview. Nothing to lose! Assuming you'll meet some of the team members before the offer you can make a call on whether to accept based on how you got along with them (and the info /reg flags you were able to glean on their culture).
