Also it’s a lot safer to eat a filet like in the Wellington medium rare than a burger with ground beef medium rare. Don’t you sear off the filet before wrapping the Wellington in pastry? That sear should kill off any bacteria on the surface. The bacteria doesn’t live inside the filet.

Loved her book, and the other books she’s written as well! I couldn’t quite remember her take on this. When pregnant I definitely had some rare steak, but just didn’t do it super often. And beef was the only meat that I ate below the recommended temp. I didn’t do raw fish or anything.
You could also so like a seafood boil type thing, I knew someone who did that last year as well!
Have you looked into the studies around that? If you saw evidence that it was ok, would you be comfortable eating it rare? (Totally your choice! But I found that some things I was told were outdated and the reading the science behind it helped me decide what I wanted to follow)
Baked spaghetti is one we’ve done in the past, one of my favs! You could also do a pork tenderloin. Super simple marinade can make a delicious pork.

I feel for you as I hate overcooked meat. I’ll be 19 weeks and going to my in laws house for the holidays but I don’t have to worry about this problem as my MIL way overcooks all meat. I’m jealous of your Wellington!
