If it may help, don’t try to bring it in a funny way or directly accuse him. Try to approach it in a serious and calm manner. If his fingers bleed perhaps get him a tissue and ask him in a caring way what causes him to bite his nails.
I second the first response. Honestly, sounds like he’s stressed as hell and may be completely unaware of his habit.

Do a “let’s grab a coffee 1:1 and talk about how things are going” chat - and broach the conversation more as I’ve been noticing xx and was wondering if there’s some work stress I can help with, etc… basically come to it more from a place of caring than gross - it may help address the issue while offering support.
You could begin by worrying about yourself. Chronic nail-biting is an extremely difficult habit to break, usually begins in early childhood. Very obvious sign of anxiety.
Is he bleeding profusely all over your team? Is he transmitting disease? Is this physically harming you in any way? Read the room and try to be a bit less discriminatory. Will probably do wonders for your whole team…
