I dump fresh veggies etc into an instant pot. Especially now that it's getting colder. Yay low effort soup. Also current low effort fav that works with frozen chicken: https://www.runtastic.com/blog/en/hummus-crusted-chicken-with-vegetables-the-perfect-low-carb-dinner/
If you eat meat, Trader Joe’s sells those pre-seasoned meats (try shawarma chicken thighs). I usually buy 2 or 3 each time I go and leave them in the freezer. Thaw and cook with frozen vegetables and your pasta will work too! TJ’s also sells those ready in minutes frozen meals, they usually need more seasoning for my taste but they’re a quick and less unhealthy way to get dinner (try the chicken chop suey).
I always have a healthy soup in my cupboard and a healthy frozen meal. Big fan of frozen veggies so you can add them to rice or pasta in a pinch
Eggs and fresh herbs (wrap in a wet paper towel in a green saver bag), good cheese, frozen peas, wine and broth, green onions. Rice, quinoa, pasta and beans. Frozen shrimp. Good bread (refrigerate if needed), milk, good coffee and tea.
Get a vacuum sealer from Costco. Prep simple meals with limited other ingredients!

This freezes nicely, so you can come back to it a week later when you’re done traveling!
I second keeping marinated meats in the freezer. I also always have frozen cauliflower rice, spinach, and butternut squash in the freezer. I also make large pots of soup on weekends and freeze it
Get an air fryer!
@EY1 that looks so good! Love hummus, but haven’t tried cooking it WITH chicken. Yum!
I do instacart frequently for groceries. That way I can drop things in it throughout the week based on what I decide I’ll need/want when I get home.
Most kitchen staples are relatively non perishable (spices, seasonings, sauces, oils, butter, sugar, flour, etc). Once you're stocked up on those then a grocery store run for a protein and veggie takes 5 minutes
Also, if you live in a complete stag pad, consider a small chest freezer. Bigger capacity and easier to organize than your normal fridge.
We now have a very fancy Thermador freezer and honestly miss our Chinesium special from Best Buy that used to live in our dining room. Held Costco frozen veggies so well, and we organized it like a lab freezer with stacked plastic bins.
Lol this is literally my life... with frozen bread and peanut butter added to the mix
I used to go out and grab the smaller salad kits from Trader Joe's for Sat/ Sun when I was traveling very week. Fresh + everything in one place and prepped.
McK2 nails it. I do frozen veggies to cook and sauté
