In the very least, you should use a credit card that pays cash back or reward points to pay the bill, and then use your HSA to reimburse yourself. Make sure you keep receipts, just in case. There's no reason not to collect bonus points on those medical expenses, as long as you pay them off and do not accumulate debt over them.
Personally, I can afford to pay medical expenses without dipping into the HSA at all, so I am letting mine grow. I think it just depends on whether you have enough to cover the costs or not. Medical expenses in retirement are inevitable, so that HSA, which has grown over time, will sure come in handy one day.
Right now, it's in a single Vanguard S&P500 index fund. Keeps it simple and I don't really need to pay attention to it.

I personally would just use the HSA for medical expenses. You can invest the tax savings elsewhere.
