Get an RFID blocking wallet if you are so paranoid, but like others said- not probable with commercial readers and there is fraud protection anyway.

If you don’t want to invest in a RFID blocking wallet, just put a sheet of aluminum foil in your wallet on the outermost layer of the wallet. It should block NFCs from reading your CCs, unless you explicitly take your CC out of the wallet.

Don’t scan your wallet? I’m confused what you’re asking. Do you think your NFC cards get scanned just because you’re carrying them?
I need to tap my wallet on the terminal because my transit card works using NFC tech as well. I think my Amex card thinks I'm tapping it too
I would recommend one of these options for your situation:
1. You can get a single rfid card sleeve and just put the amex in it to block that cards nfc
2. See if your transit system lets you add transit card to mobile wallet and use your phone instead
