I would go ahead and do the interview, negotiate the best you can, and if you get an offer, then talk about what your starting date needs are at that point. If they give you an acceptable offer and agree to your start date limitations, accept the offer. You can still apply to other jobs in May-ish if you still want shop for better offers. You can also use the first offer as negotiating leverage at that point. If you get something substantially better, you can withdraw your acceptance on the first offer, but if you don't get a better option, you still have an offer that works for you.
If you're not planning to start a new job until July, maybe hold off on applying until April/May?

Do the interview and be transparent that you’re on maternity leave and that your plan to return to work isn’t until July. They may say that they’re looking to hire sooner than that but if you make a great impression it will lead to opening the door back up for you when the timing is more suitable. Or they may be putting out feelers now and they may love you so much they decide they’re open to waiting for you! No harm in trying. :)
