What triggers you?
I am a Principal Solutions Architect with 13 YOE of which 5 years exp is with Biotech focusing on Public Cloud (AWS) & overall AWS exp. 9 years. I need suggestions /opinions if applying for a Senior Solutions Architect (Level6) at AWS makes sense or if I should aim for a Principal SA (level 7) role at AWS with Healthcare & Lifesciences industry experience. If it makes any difference, I worked for AWS ProServe as an external SA in the past. Any insights / feedback appreciated.

Lol depends on how quickly you want to grow in your career. If quick, then go with the clients and leaders of your firm. If you wanna coast then play the ‘no expectations’
As long as it's not an every night thing
If it's an uncommon occurrence, treat it with the same priority as a client meeting. If it's a weekly thing, I'd probably be making up a good excuse to miss a few. But of course, I'd be doing that knowing that I'm missing out on a key opportunity to build the client relationship and that a noticeable absence could very easily leave a negative impact/impression.

Nobody said you had to drink alcohol. Go out with client so you engage, see each other in a new context.
Never say no to free alcohol
Are you on the road or home city? Is it 3x/week or 1x/month? Is it a new relationship or long standing? Are you the relationship manager, higher up, lowest rank? If a rarer occasion, new relationship, etc. go for at least 30-60min and then excuse yourself if you need to. Showing up for a little time often gives a better impression, even if you can’t stay all night. Feel free to nurse a drink and/or drink water. 90% of clients and team will understand and go with whatever decision you are making. The other 10% can be difficult sometimes, but can be managed.
You should make every effort to go if the client has invited the team. But, be very careful with drinks. Words cause permanent damage. Look up the term 'nurse a drink'. It's gold. Not more than 2 no matter the poison. If hard drinks, then keep refilling with soda.
