Your best bet here will be used models - most of the new pieces between $1500-3000 are just not the greatest value propositions. I’d look at the ones below, which should mostly be available for under $3k, but I’d also consider bumping up your budget to the $4-6k range.

You can snag a used Omega Seamaster from the Brosnan movies for $1500-$2000. Make sure to get one that’s recently serviced or expect to tack on another $6-700 for service soon after.
Don’t get the quartz one though

For my preferences, they are the best cost-benefit diver out there. Solid and gorgeous watch.
Used IWC Pilot‘s Watch. Mark XVI should be the easiest to get.
