If my blood sugar is consistenly within fasting levels (not higher than 100 mg/dl), even after eating, does that mean that my body isnt taking sugar from my foods? (I eat high vegg)

This is not a bad thing in my opinion. Do you have problems with energy? Or dizziness? Some people just don’t have a huge impact to the blood sugar. You don’t get a sugar rush then a cliff effect. If you blood sugar is always high that’s a problem aka diabetes.

I had a scare last week. Lethergic to the point of not knowing if i could get through shower. BS dropped to 56. Panicked, ate whatever i could find and got it up. Not sure how long this has been problem. I eat high vegg and clean protein so i basically dont eat sugar (or carbs = sugar). It was scary. Diabetes runs in my family so im very in touch with making sure i steer clear (hopefully)
