Once I started interviewing people I was appalled at how many don't follow up with thank you notes.

Exactly what EY1 said, my understanding was that me sending a thank you email was hardly going to make a difference to the outcome of the interview, but I see what you're all saying and it seems like it's part of etiquette, so makes sense to drop a thank you note, especially if they've given a card! Thanks
Think about it this way. It may be etiquette but if things go well you'll be jump starting your relationship with people at the new company you're joining.
