That area is very beautiful but can be rather pricy/more luxurious than your average camping experience- so I would just keep that in mind.
Would recommend searching glamping in the area - that tends to bring up results of cabins or luxury tents that may better fit what you had in mind...like Ventana Campground, Glen Oaks Big Sur, Treebones Resort, etc. Once you get into towns like Carmel by the Sea, Monterey, San Luis Obispo, definitely less ‘camping’ style options.
For true camping..Riverside & Fernwood Campgrounds have some cabins.
Check restrictions - some campgrounds are shutting down their group lots during COVID and others closed due to fires (there may be fire bans in place).

Can you clarify, are you planning this trip post Covid or now/soon? California has a stay at home order, it would be highly irresponsible to travel there at this time
Finally came back to this after being turned off by the Covid comments. I spent the past several weeks doing diligent research on all things related to CA restrictions. I came across nothing related to planning a trip. I mean are you people going to wait until everything’s open to plan something?
Pismo beach
I always loved Lake Tahoe. The beach always felt dirty with the salty air.
The Pismo Oceano campground is the only state park in CA where you can take your vehicle and camp on the beach. Lovely beach dunes. They do have a phased opening approach so I’d take note of that.
Also, so many great hikes in this area. If you end up going to San Luis Obispo area, check out Bishop’s Peak and Montana de Oro.

I’m pretty sure campgrounds are closed due to CA’s stay at home order. I would check this out.
