You’ve got to put your foot down at some point. They don’t care; you’re an asset and they make money by sweating the assets. This might sound harsh/grim, but if you died from overwork, they would replace you the next day. So please take care.

Push back harder. Just be very firm and tell them you are at capacity. Throw in a comment about being worried you're going to commit malpractice from being spread too thin. Partners need to hire to meet workload demands, not just pile on to existing associates.
