I’m on adhd meds and I will say I do build up a tolerance over time. But I remedy this by taking breaks on weekends/during time off. Also switching which med you take after a couple of months like say Concerta to Vyvanse can help reset your tolerance.

I'm about to go through the diagnosis process. From what I read on different websites, depending on how your live with ADHD, meds aren't necessarily needed. It's something you need to discuss with your psychiatrist when it comes down to it. They'll have all the info you need and can definitely walk you better through the anxiety
If you feel like that’s going to be an issue for you, there are other ways and means of mitigating the neurological/neurophysiological effects of ADHD that don’t involve prescription drugs. Yoga, meditation, breath work, self-talk, working out to expend anxious energy, EMDR etc are all practices that are helpful and circumvent drug reliance.
I’m on medication but not a stimulant. I know others who tried straterra and haaated it but it works well for me. So just know that there could be other types of medications than stimulants.
