If you want the best view of the city, then stay at the W Hoboken. Though it's not in the middle of Manhattan, the commute to midtown and downtown Manhattan are just a 10 min train ride
You can’t really see the city well from within most buildings in Manhattan. All other buildings block views. Best bet is JW Essex House if you get a park view or Marriott Financial District if you get 40th+ floor.
The Residence Inn New York Manhattan is the tallest hotel in NYC and its right by Central Park and Times Square.
The Sheraton Tribeca/Chinatown has a lounge with a terrace that looks uptown with an amazing city view. It’s not that close to midtown though.

Also, the Ritz Carlton at Battery Park has amazing views of the Statue of Liberty, if that's of interest to you
