What aspect of legal do you like? I think you will need to give us a little more info to give you a more accurate answer, as different law sectors have different responsibilities and work experiences.

Imo most paralegals are overworked and underpaid. Though, of course, it will always depend on your physical location, area of law, years of experience, and type of employer (law firm, government, in-house, etc.) A paralegal in a small town will likely make fast food wages or close to it, but in larger metropolitan cities like San Francisco or New York you could make a decent salary. Also, check to see if your state has any requirements to be a paralegal. In California, you're required to be in compliance with Bus. & Prof. Code sec. 6450.
I like business valuations, so maybe corporate law. I’m in NY area. Right now I work in personal injury.
I think your best bet would be looking into Legal adjacent jobs in larger companies. Legal departments in those companies are a lot bigger and have roles that maybe are adjacent to legal or involve the law in some way.

I love being a paralegal. I make 6 figures and have good work life balance. You could easily transition into a plaintiffs personal injury paralegal. If been in insurance defense my whole career and plaintiff side seems awful to me though. I wish I had gone in house earlier in my career. That is where the money is. IP law is extremely lucrative if that interests you.
