Normally it’s 30-60 days depending on the benefit. So if you like it there your not too far from what you would have to wait if you were to go somewhere else

Like buy discounted through the company or on the open market? If there is not a benefits package unless your salary is high enough to supplement them I would look elsewhere. Generally when considering a new job you should consider benefits as part of compensation. It must be a really small company if they don’t offer any health or retirement benefits.
You can leave before 6 months. Wanting benefits is a legit reason for leaving a job if new interviewers ask. Just figure out how to frame it since you knew when you took the job. Example; "There are a few factors, the position has shifted focus in the short time I've been here and it doesn't align with my long term goals, plus a lack of a benefits package impacts salary, so I'm looking for a place to land for long term "
Just put the job as contract on your resume or use just the year instead of month and year to get it past the screener.
My first job out of college basically had me wait through a certain period before I was eligible for health benefits. But now that I have more experience, I usually ask the recruiter/hiring manager if health benefits are effective day 1 or there is a waiting period at the end of the interview.

Im transitioning to civilian life and always thought leaving inside 6 months was horrible. I am fortunate to have a mentor who is a C suite person at a large company. His perspective is anything under a year is fair game. He said they get upset when they put a year plus into a person and then they jump to a "better" job. This conversation happened because Im trying to leave my first not Army job after 2 weeks :)
