I’m on H1B working remotely from WA due to a personal reason since few weeks and plan to be here for couple of months more.
My work location is in NYC. However, my DL has expired 3 months back.
Can I get on my fiancé’s lease in WA (for residential proof) and get a driver’s license done here? OR
Do I have to wait to get an H1 amendment approved and make an additional amendment when I move back to NYC ?

Taking time off is okay. I would avoid going out of the country though- the immigration officer can request you to see your pay stubs and ask you where you work. Lying to a federal officer is not advisable.
GT1 you don't need a new stamp - you can use the old Visa and enter with new approval (assuming Visa is still valid for entry)
I have changed jobs twice. Everything single time I took several weeks off visiting my family and traveling internationally. No problem ever on the way back. Just need to use your new h1b and tell them the truth that you are changing jobs
GT1 - Based on what OP is saying, the new H1B is not stamped yet. How can he then use the new H1B while entering the country?
OP - Are you planning to travel after the approval comes through? Or while the transfer request is in process with the USCIS?

You're good then. Just carry your offer letter and approval notice with new employer if you travel internationally.
I would suggest that you check with your immigration lawyers to make sure you don’t need to get visa stamping done before you try to re-enter the country. Because technically your currently stamped visa would have the old sponsor’s name.
I think you should be ok since the old visa is still valid (employees ever revoke it) and I’m sure you will carry all the documents associated with the approved visa transfer. But better to check than to be sorry later.
Wait. I assumed that you are getting a new visa stamp on your trip. You do need a stamp with your new employer on the way back.
