I'd just tell them that you previously scheduled your vacation way before assisting on their engagement and you have prior plans. You can offer to do what you can to assist during the week but due to travel plans already made, you're unavailable on Saturday.
You're an adult, they can't force you to do anything. Can they tell you that you need to cancel the trip or else it will impact your performance review negatively? Sure they can. Will they do that? Who knows.
I've already scheduled my vacation a few months ago. I'm just helping out on this year end for a few weeks. Not a core member of the audit team. They want us to work on Saturday when I'm already suppose to roll off this client this week

You need to be communicating (and reminding) with people well before your scheduled time off. Not just for the benefit of your team, but also for your own peace of mind, ensuring you can turn your brain off while you're away. If you've done all of that, taking your time off should not be an issue. If it is, and then push back politely.
I've seen it happen many times. Some employees push back and still get to go with no negative repercussions and others just accept it and sulk. Is there a justified reason they are needing you to be there? Can someone else fill in your spot while you're gone? I'm a big proponent of vacation being unplugging from work so I'm not one to actively suggest working while on vacation if you're easily replaceable on an engagement.
^In the future you probably want to do this at least a month ahead of time, with intermittent reminders up through when you leave. Seeing as how it's not your main client and scheduled to roll off, you're likely fine here. Just something to note for the future.
Sounds like you're fine then. Just make sure you are very clear with them that you'll be out of town and unavailable. Communication is the key here. As long as they're informed it's on them. I recommend emailing as well as verbal communication. The email will serve as a record in case they try to pull then "you never told us" thing.
If i book vaca way before rolling onto an engagement, i always tell the team first thing after i start that i already bookED vaca. As in i paid and everything so they know there's no going back

Yeah that's bs if you've had it booked for months and were just pulled into this engagement. Tell them you already have your flight/ hotel booked or whatever.
They're just gonna tell you to get all your shit done before then. How many hours are you putting in a week now? If less than 60, I can imagine them coming back and asking you to just front load the work.
Tell then you are on vacation and unless they want to pay to reschedule it ain't happening
The employer-employee relationship is an at-will type of employment. Unless they fire you for a reason that's protected by law (race, gender, etc...) they are free to do whatever they like. Most firms won't be dicks like this, but there's no law that says they can't.
My last day on this client is Wednesday and my pto starts Thursday until next Monday
