With 10 days, you have plenty of time to go do short excursions elsewhere: esp. Ayer’s Rock and Cairns (Great Barrier Reef)

If you don’t mind heights, the Sydney Harbour Bridge Climb is supposed to be awesome! I ran out of money to do it when I went in college but I’ll be back to do it one day!
Sydney is filled with a lot of fun bars and restaurants so do research on what you like beforehand. Also quite a few museums and tours. I enjoyed the ship museum tour, the barracks tour, and the botanical gardens. Obviously the opera house. I would suggest a dinner cruise or boat ride around the harbor.
Check out Bondi Beach and Manly Beach, and the Blue Mountains. If you have budget to travel within Australia, I’d say Cairns is a fun little area and you can see the Great Barrier Reef and do more outdoorsy activities.
Melbourne is also great if you decide to do a few days in different cities.
