Perhaps not higher education, but language learning is a great way to keep yourself occupied and learning.
While the language itself is great, it’s also an opportunity to dive deep into history, culture, or whatever particular aspect of the country/region interests you. Not to mention you can make some great connection with people.
I’m currently learning Chinese and enjoy taking a multi-faceted approach, learning about their economy, cuisine, and modern entertainment. Quite fun, and will keep me engaged for years.
Fabulous suggestion, and I a couldn't agree more. I'd only add that learning an instrument can be very fulfilling.

Master class is more entertainment like, great courses is more academic like with lots of topics, mind valley to me is more in the middle but focused on personal development.
For great courses dont pay full price. There are plenty of "sales" that happen every few weeks. Many are high quality courses from accredited collegd professors.
I have a bunch of classes in my queue that I bought : raising emotionally intelligent kids, how to play chess, dog training 101, how to debate, intro to law.
I have self diagnosed adhd so am at various points in the course across all of them.
Just do certifications instead of a degree program
What industry are you in? As one example, in healthcare you could do online part-time degrees such as MPH, DrPH, MS Biotechnology, Masters in Bioengineering etc. at your own pace.

Look into the executive graduate courses. You do everything with a cohort that meets 1 weekend per month. These are available for MBAs but I would think for other types of grad programs, also.
