I’m in a similar boat, and all my friends that have done it have spent more time and money on it than anticipated. More time? Does it really matter if you have the garage space for it? We’re all busy and it’s supposed to be an enjoyable experience. More money? Make a budget, but if you want to quit, sell it, part it out, etc. My issue is deciding what I want, and then finding a good version of it (hate body work).

I did a light restoration on a 71 Oldsmobile Cutlass, and it was a surprisingly fun and affordable project.
I started with a running and driving car, which I think was key. Most of my mechanical work was maintenance, simple upgrades, and small repairs. I didn't have to do an engine rebuild or swap out the transmission or anything like that. I didn't even pull the engine.
And for the body work, I fixed a couple rust spots, then sent the car out for paint. I replaced the windshield (easier than I thought it would be!). And I replaced the cracked dash with an aftermarket one that fit like a glove.
Now, at the end of the day, it wasn't going to win awards at a car show, but it looked great on the road, and I was able to sell it at a (meager) profit.
