Four Potential Factors I can think of:
1. Case material: White Gold will have a “warm glow” vs the “brighter white” of Platinum, vs the comparatively dull gray of Stainless Steel. Unless they’re side by side, you brain might notice the difference but not be able to distinguish why it looks different.
2. The environment: lighting can have a huge impact on how a watch appears. Dim lights vs bright fluorescent vs natural sunlight.
3. Age/Usage: watches will inevitably pick up micro scratches over time that will decrease the luster of both the brushed and polished sections. A new or recently polished watch with pristine surfaces will undoubtedly “pop” more.
4. Cleanliness: an unwashed watch will collect all manner of schmutz, which similar to scratches, will reduce the watches “pop”. Say no to wrist cheese.

Do you have pictures of what you’re talking about? If you’re noticing it on vintage / second hand pieces, over polishing stainless to remove normal wear and tear can leave watches looking unnaturally shining vs the brushed look most come from the factory with
No pictures unfortunately - I just notice (primarily among subs and Daytonas) that some seem to pop more than others when I see them being worn. But in looking at stock photos of SS, white gold, and even platinum, they’re indistinguishable to me, though I imagine the difference would be more apparent if compared in person.
