If I inherited a large amount of money I would stay doing exactly what I'm doing for 5-10 years and then retire at 35-40. I'd invest that money and watch it grow

Wait until after the will is settled and you have the money. Plus you don't want to burn any bridges in case you do have to work again
Just wait until after filing/until you actually get the cash from the estate. Unless you hate everyone you work with, then I guess just leave - as long as you have cushion enough to last until you receive your inheritance
