I was wondering the same thing - planning a vacation now! I'm Starwood so I'm using points at the St. Regis. St. Regis is on the north end of the island, near the Napoli Coast. Supposed to be more beautiful, lush, and pristine than the south end, but with a higher chance of rain. Hyatt is on the south end and they get more sun, but I also hear the beach/ocean is not as suitable for swimming. I've never been though, so this is just what I've read via online reviews.
We stayed at the Westin when we were there and loved it. You get access to the beach at the St. Regis (they have an agreement) but you also get a full kitchen, outdoor grills and they have a great store where you can get supplies. Hanalei is not too far away either. Now I want to go back to Kauai!!
Princeville rains all the time, Hyatt is really nice on the dry side of the island but it only takes like 45 minutes to go between each side
And yes the water is more rough at Hyatt but just around the corner there are empty more calm beach
The Sheraton is okay but not luxurious if that's what you are looking for. The Poipu beach is pretty nice though.
