You need more time than two months? In NYC?
I know people who have scoped out and decided on apartments in less than two days...

They gave you more than sufficient notice. It’s at their discretion now if they give you more time. I suggest reaching out and making a case that pleads to their heart rather than saying you wish they told you sooner because like I said, 2 months notice is more than enough. Don’t blame your disorganisation on that
Lol wut. Disorganization? The owner lives overseas. They bought this to park their money. We are the only people to ever live in the unit and they indicated that they pretty much want to keep us in the unit as long as possible. So it’s a bit surprising that they decided not to renew.
2 months is plenty enough time in NYC.

The assumption here is that everyone would be ready to pick up and move in 2 months. Never mind the financial and time commitments that requires.
I would start by asking for more time. It gets messy in a hurry, but you could make their life miserable by simply refusing to leave, paying rent, and forcing the landlord to go through an eviction process. It’s messy for you and messy for them and so in that case if you just need another month you should probably ask for it.
Isn’t this how you get on the tenant blacklist? I wouldn’t recommend this approach.
