I think you should be honest, life happens, explain the circumstances in a cover letter or even a bullet/headline on the resume
Definitely just be honest. It would not reflect negatively on you in any way, so I wouldn’t worry about that. Leaving it off could only lead to questions for minimal benefit
why not work at new job until september and until you have another job lined up?
i’d feel more secure knowing everything is lined up before we left.

My friend had a similar situation and left the 2 month job off of his resume, but it showed up in his background check for the next job which was awkward, but didn’t turn out to be an issue.
Also I think it’ll be a little easier to find a new job with some non-PA experience.
When you get to an interview you can explain it honestly, and people will understand. Maybe also clarify as well that it’s been your dream city and you plan to stay long term. I think interviewers will like the honesty and hear the passion in your voice, which contrasts from you trying to cover up a lie about your experience - they can usually sense that stuff.
