I think my company has not so good insurance but that’s just compared to friends I know that work down at the docks/port.

In general I would not give notice before passing the background check and signing the offer. With this job market you never know what can happen
Gonna second this. I have two vacations, two weeks this month, one week next month, and giving birth in May
... Still switching jobs, but I let their HR know ahead of time.

No handing in notice until the new job is sealed in stone. It's up to the new place to process that quickly if they want you sooner.
Make it clear to them that you're going away and that you have a 2 week notice period that you're honouring when you're back and that you'll only hand that in once all factors are in stone.
That way even if they're slow in processing you can still give notice appropriately and the speed is up to them.
If your current company wants to waive your 2 week notice then more rest for you between jobs.

For added context, current company has the full last week of December off so even if I wasn’t on vaca I can’t really offboard
Yeah I’m on board with pushing the hiring company start date later after I give notice. Gonna enjoy my vacation with no drama! No need to end the year with my current team with stress lol
