Cap Hill is a very nice area and I will argue that it's better than all the neighborhoods you mentioned other than Lower Highlands. South Broadway bars, Cheesman Park and downtown are all very walkable.
Sunnyside doesn't have a lot and is loosely used as a neighborhood by new builders that try to price it high by claiming proximity (which may not even be true because you are the farthest edge of Sunnyside) to Lower Highlands. Same is true for West Highlands, homes almost near Sloan's Lake which is legit 4-5 miles away from Downtown might be claimed as West Highlands in order for builders to charge a premium using the Highlands name or proximity to it.
If you want urban living experience in Denver I would stick to Lower Highlands, Cap Hill, Golden Triangle/Speer, LoDo/Union Station, Uptown, or River North (most of these have a large homeless population)
I live in Cheesman and love it - restaurants, a Whole Foods, and coffee shops nearby with only a short bike ride to downtown.
I have friends in Capitol Hill that love it. I'd say it's less fancy (and a large homeless population if that really bothers you), but you're closer to a lot more fun stuff. The area by the zoo is nice for young people too.
