I highly recommend Martinique, a French-speaking island in the Caribbean. I visited a few years ago and really loved it there. Wonderful, quiet beaches (some black sands), good hiking, and laid back historic towns. Rum distilleries too.
I echo Martinique and Guadeloupe. Both great French overseas departments. You'll need a rental car on both to explore the islands fully.

We’re going to Saint Martin/ Sint Maarten in a month - haven’t been before, but from what I can tell, it has a lot of what you describe. If you stay on Orient Beach, you can walk to lots of restaurants (which are supposed to be really good on the whole), there is a whole mountainous side of the island that is good for hiking, and it apparently has a European feel to it. Maybe look into it?
Check out St. Lucia. They have several little towns to visit during the day. Plus it has a rainforest.
I'd also suggest Puerto Rico as well - look beyond San Juan. I'd suggest having a car to get the most out of the island.
