I did a day tour of the Grand Canyon from Vegas. (I’ve spent lots of time at and in the canyon before including a 4 day rafting trip - but my sister had never been).
We took a small plane to the canyon from Vegas and then a helicopter tour. We then went to a couple of the viewing points. Sis loved it.

If parents are comfortable with it do a helicopter tour. Great way to see everything and expend less energy hiking and climbing as long as they are comfortable flying and not scared of heights. There’s nothing like flying around the canyon itself in a helicopter to experience the views.
Highly recommend staying at the Westin in lake Las Vegas. It’s a resort on the lake, so it’s good to chill there with the parents, but also it gets you closer to the Arizona border.

Zion National Park is closer than the Grand Canyon.
I think OP wants to see Grand Canyon so let’s help him out
OP - as someone mentioned, it’s a 4 hr drive from Vegas
You can drive in the morning and check out various view points. IMO if you see from one point it’s pretty much the same from everywhere else lol
But you can stay in Cameron AZ and drive in the morning to see sunrise which is really beautiful
Also, there are places to eat inside the park
Now if you still have time
You can either visit Zion which is amazing but again long drive
If you want more closer you can go to Red Rock Canyon which is 40 mins from the Las Vegas strip and really pretty
In Vegas, you can walk around various casinos and see the bellagio waterfront show

If Antelope Canyon is open, go. You must be on a tour though. You also must see either sunrise or sunset so I would definitely spend a night close to GC. It’s the most incredible night sky I’ve ever seen
The Grand Canyon is best experienced as an adventurous activity. It’s a four hour drive from Vegas. What’s the point of driving so far just for a looksy.
Sometimes you just have to for the sake of family :)
Loved the Mob Museum in Vegas and also the Titanic exhibit at the Luxor Hotel. I’ve heard the Neon Museum is really cool too but haven’t been yet. Fremont Street in the downtown area is definitely worth checking out—there is also a great Thai restaurant there—Le Thai.

Maybe Hoover Dam tour? Some walking but not too much. And get a hotel with a good amenities (nice pool, restaurants they like, etc.) so they have easy access to entertainment?

If North Rim of GC is open use that to access the canyon. Less people, same impressive views. Zion is an option but access restrictions could be an issue. Know before you go.
A bit pricey but I HIGHLY recommend Mayfair supper club at the Bellagio for a wonderful dinner + entertainment. Recommend going at an earlier time (eg 630) because it turns ‘dark’ late night.
Zion National Park would be my suggestion. Easy drive from Vegas. Stay at the Pearl Hotel in Springdale UT. Lots of easy hikes (and hard ones) in Zion. Can take a shuttle bus through the canyon, and drive through it as well to Bryce Canyon. The North Rim of the Grand Canyon is also drivable from Zion. Get a cabin at the North Rim if you can, but can be hard to get. Other places to stay near Jacob’s Lake. Fly into Vegas, spend the night on the Strip, have a great meal and gamble some and get an early start to Zion. Home run trip!
