Paradoxically, taking more time off probably eliminates the make-up work because other resources or managers will have to own it.
Take the time off. Try to take monday off instead of friday. This way, the bar is lower of Friday (usually) and colleagues will be less focused on wanting you to do things right away.
But if you're really dealing with burnout, 1 day is nowhere near enough. Put 1-2 weeks on the calendar asap.
A day off won't fix that. You need to have a straightforward conversation with your SM/Director or whoever to tell them you need some help, guidance or something else, lest project deadlines be put at risk. Come prepared with an explanation of what's going on and what you propose. Maybe they can give you access to subject matter expert time if you need that, or associate/analyst hours so you can focus on management.

Taking more than 1 day off for PTO? Totally agree.
Take a Fri off if you're already working that much it won't make a difference in the long run, and spend it actually relaxing.
When you come back, why are you working so much? If bad project management means this is everyone's status quo, talk to your counselor about getting out. If its everyone but because crunch time, try to power thru if you like the leadership team. If not, talk to your counselor. If its just you, lay out your responsibilities and how long they take, then propose a solution to your manager - an intern, a bta, temp help from other team members, etc. If you have a good manager they should want you to succeed. How long until your project is over? Can you take a week or two off when it finishes
It ends in November so I can take off afterwards but not sure if I'll make it...

Take a week off instead. Then someone will have to take over your stuff and you'll actually get a chance to detox.
