Made an appointment to see a dietician next week to help with meal planning, prepping, shopping, and even some cooking. I eat take out for almost every meal. My son deserves better than the processed crap I'm making. Wish me luck. Hoping this is a turning point for me.

Good job! It can be a lot at once so to make it easier, you can also incorporate some fresh meal delivery services like Blue Apron where they deliver the fresh ingredients of meals in measured quantities for specific meals, and easy instructions to follow.

Other tips
-keep bags of mixed frozen vegetables, cauliflower fried rice and you can easily make stir fry.
-Angel hair pasta cooks in ~4 min, you can add Raos tomato sauce+some protein, and it tastes like a restaurant meal.
-natural/organic chicken tenders - easy bake
-Costco/Wholefoods meals that you just pop in oven - like fresh salmon with dill and herb butter on top
-Wholefoods delivery of stuff weekly - fruit, veggies, yogurt, eggs, etc.

May I suggest an instant pot? It will make you enough food for a few days, and there are plenty of recipes that allow you to toss everything in at once, set it, and just let it cook. I can suggest some.

Start small! I would make a meal plan out of the normal meals we would eat and try to do a new or different recipe like twice a month. You got this!!

I love to cook, but I need fast weekday meals and I’ve never gotten the hang of meal prep. I have a handful of recipes that are fast, though, and don’t stress me to prepare.
-baked sweet chili salmon - takes 20 min (seriously - buy this stuff, pour it on, bake for 15 min. Served with blanched broccoli and white rice made with Better than Bouillon instead of water. My kids LOVE it.)
-sheet pan chicken. Toss bone-in chicken breast with herbs, cauliflower, potatoes, lemon halves and arrange around 8 cloves of garlic. Bake at 475 degrees for about 25 min. Mix together
-frozen pastas are a wonderful thing
-if you get a panini maker, a hot sandwich is fancy and a legitimate dinner

Thanks all. I made dinner tonight for the first time in MONTHS. It was a gnocchi dish with chicken, mushrooms, and spinach. Forty mins at most to make. I've decided to try to make two dinners and one lunch per week, and to pick from recipes that are around thirty mins to make. That's about how long it takes to get delivery.
