If they stay in the US, my niece in law works at the Grand Canyon- they do a 5 day/night hike and end with white water rafting. She loves it. My husband, my BIL, and their 13 year old other daughter went last year and also loved it.
Spend time on a dude ranch in Montana, Wyoming, or Arizona. Be cowboys for a week moving cattle, fly fishing, hiking, etc. Great father son bonding on a couple day cattle drive.

Welcome to Partner life. Around so infrequently he has to ask strangers what his own son would like for his birthday.
He wants to take everyone there next May for his oldest daughter high school graduation lol

That’s what he wants to do. He basically said his son plays football and is an Eagle Scout and doesn’t want to drink because it’s “illegal”. He’s open to everything but just wants to have fun lol so not much to go off

Switzerland!!!! Do they like skiing/snowboarding? There are some slopes open year round in Switzerland. Zermatt is beautiful and amazing (even if you don’t like skiing)
If the son is into sports, any place in Europe with soccer or rugby.
Down to the Caribbean and they can get their open water scuba certification together
