Split out the time to meet them frequently and have them craft a transition doc, even if you're both incredibly busy.
Have them identify what's most likely to fall through the cracks and pay special attention to that.
If they offer to be available after they leave for questions, and you end up having questions, take them up on it. They wouldn't have offered if they didn't mean it. Just don't be annoying about it.
