You are not supposed to take over, the entire team is supposed to take over. Just ask your boss which tasks to de-prioritise and which one to prioritize. There is actually a course on LinkedIn learning about this.
I actually have a handover meeting tomorrow. This is horrible up, they are planning to give me an extra monthly task. And if they insist, I am going to ask for compensation. But I will tell you what will happen after tomorrow's meeting and see whether my strategy works.
Yes they will. Everytime he asks you to do that, ask him which task you should stop working on so that you can take up this one.
