Sorry to rain on your parade, but iPads are 30% as productive as actual laptops. Awful for text editing and PowerPoint (mouse or no mouse).
They’ll be useful for partners reviewing documents. Only.
As to your actual question, Evernote.
Thanks for your reply!
I also think that I will be using my laptop for most of the actual work.
The motivation for our firm (and also that was my complaint) is that notes (client meetings, brainstorming on file, notes reviewing evidence, etc.) were on taken paper and only found in the physical file and never scanned, therefore, not having access remotely to anyone’s notes.
Moreover, going through the actual paper file was a nightmare.
The primary goal for the iPad is for any kind of notes to be sorted and found in the electronic file so any attorney working on the file can have access to.
The app “Good notes” 🤗
I concur with GoodNotes.

I've tried both Goodnotes and Notability. I do like them both for notetaking but ended up preferring Notability because it also has an app for my Macbook Air.
I would also recommend getting a keyboard case like Brydge or Lenrich to be able to use your iPad as a small laptop.
I use notability as well for the same reason - big fan.
The director of my firm often uses hers to audio record meetings. She will sometimes take notes on it, but not as often as when she first got it as she knows I’ll take detailed notes by hand anyway. And we also now have a fancy set up in our boardroom so it’s less necessary. But I 10000% think it’s great for client meetings
