You have to water outside herbs at least once a day if itโs really hot then twice a day. Check before you water but this was my experience when I grew them last summer.
Whatโs the weather been like and how often do you water?

Iโm in Chicago, itโs been pretty warm the past week, but nothing too dramatic. I water a couple times a week (depending how quick the soil is drying up)
Looks parched. Was that outdoor in the heatwave? And are the green bits at the soil level mint or other weeds that got in there?

You've got new growth coming in, so I would cut it back just above that new growth (inch above soil). Definitely watch for spider mites. They show up in response to underwatering. Make sure you're watering until water comes out the bottom of the pot - this encourages deeper root growth, which helps the plant resist heat. It should come back though with pruning.
Lots of good suggestions above. Another to explore - is the soil thoroughly wet when watered? You can also try watering from the bottom of thr pot (stick your pot in a small tub of water) when watering
