Need more context. Is the job an analyst level job or a director level job? Is it in Thailand or the States? Is it Florida or NY?

It depends, if you're a high achiever that will hate boring work then take the challenging one. If you just want to turn in a 9-5 and go home take the easy one. Long term the challenging one will open more opportunities and pay better, but don't complain about the work life balance if you take it. Can't comment on the local rates, but it's not unusual for initial pay to be the same.
Another take, use your Unilever brand and apply for an MBA.

Is associate one level below manager? If so, it’s slightly low. I would expect 120k TC for that level.
And I would take the more challenging one. You can learn new skills and also use that to pivot elsewhere if Unilever doesn’t pan out.
In my view, depends your situation, if you looking for great experience the second one is the best. Anyway, what WL is it?
