I would say 0 experience is fine. Is consulting experience really valued in data science?
A year in consulting could be useful in learning the soft skills, but don't expect to gain much in analytics if that's what you are lacking for a data scientist role in industry

Get some data science experience, forget consulting. It doesn’t matter where as long as you learn the content and have the hard skills. I don’t understand how you think consulting can help you with that. What kind of consulting do you actually mean?

Gotta be more specific — are you going into analytics to begin with? Or general management / strategy consulting? The latter will not really be useful as a stepping stone to real research and experimentation based data science. It may actually hinder you

Currently at IBM and seeing our data scientists need to practice their craft outside of the job as consulting in the field isn’t giving them enough exposure for exits into pure data science roles. If that’s what data science consultants are seeing, I don’t imagine strategy being more beneficial.
