Snake plants are really hard to kill.
What direction do your windows face - would the plants be getting direct or indirect sunlight? Bird of paradise and fiddle leaf fig can both get huge. If you’re just starting out, I might actually recommend a pothos, but with a trellis or moss pole to climb up, rather than hanging like you often see them. They can get huge with the right support!
Thanks so much! Windows face east so the plants will get good direct morning sun whenever the sun comes out.
Norfolk Island Pines are pretty easy to maintain. Bananas also will do well, although they can get fairly broad. There are also some citrus hybrids that don't get too tall and may even produce some fruit for you.

You could get a white BOP or fiddle. The BOP is easier to take care of though. You could also get a ficus (any variety) and/or a monstera.
Bird of Paradise for sure! Less temperamental in changing temps than fiddles

I also recommend getting a humidifier to make the environment more enjoyable for your plants and yourself during the winter. Honeywell makes some great floor-standing models for differently sized spaces.
